Pecan Roll Overnight French Toast Recipe
Overnight french toast is one of my favorite go-to breakfast meals because it helps me turn a 30¢ discount loaf of Cuban or french bread into something edible! AND It’s a frugal meal that everyone in the home, and even guests, will think you spent hours on!
Pecan Roll Overnight French Toast Recipe
Ingredients:
- 1 stale loaf Cuban or French Bread
- 3/4 cup brown sugar
- 1/2 cup butter, melted
- 1 1/2 cups half and half
- 5 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 cup chopped pecans
Directions:
The night before, cut bread into chunks and place inside a LARGE mixing bowl.
In a separate bowl, beat together eggs, melted butter, half and half, 1/2 cup brown sugar, vanilla, and cinnamon. Pour mixture onto bread chunks. Toss until all bread pieces are moist. Cover bread mixture with a lid or plastic wrap and chill overnight.
The next morning, preheat oven to 350 deg. Grease baking dish and add bread mixture. Top with additional 1/4 cup brown sugar and 1/2 cup pecans.
Bake for 30-45 min.
Quick Tip:
Not everyone will want the added sweetness, but our overnight french toast is often served with warm maple syrup or homemade caramel sauce on the side.
